Hot Cross Easter Bunnies

One of the best things about Bermuda at Easter-time is home-made hot cross buns. Can you imagine my excitement when my neighbour rang my doorbell yesterday to deliver some that she'd made earlier that day? She's an amazing baker and these particular hot cross buns were really impressive specimens - supersized, with lots of large plump raisins and a glazed top.
I thought I'd include the recipe here so that you can give it a try - if you're Bermudian then chances are you'll already have your own hot cross bun recipe handed down through your family, but give these a go and compare the results. Maybe you'll prefer your tried and tested method, or perhaps you'll make a new discovery - who knows?

Let them eat Codfish cakes
Eaten throughout the year in Bermuda, on Good Friday codfish cakes are often served sandwiched in a hot cross bun, together with the usual Bermudian dollop of mayonnaise. They make a great snack for the hungry kite-flyer!

Happy Pancake Day/Shrove Tuesday/Mardi Gras!
If, like me, you didn’t quite get around to whipping up some batter and getting your flip on this morning (after years of practice I can now eat a piece of toast and put mascara on at the same time, but adding a hot frying pan to the routine would be frankly foolish) then you may be celebrating pancake day this evening. Crepes aren’t just for breakfast, they make a great dessert too! Here’s a very basic recipe to get you started:
